Bacon Wrapped Avocado Eggs

After seeing this recipe whilst scrolling through Facebook the other day, I thought I’d give it a go. It’s a great way to kick-start your morning, loaded with omega-3, protein and healthy fatty acids – everything needed for a nourishing breakfast. Every component to this dish has something delicious to offer, from the crispy bacon, to the creamy avocado and the softness of the egg. You could poach the eggs instead if you prefer – it’s entirely up to you.

This recipe is so easy to make and can be used for any occasion. The best part about this recipe is that it requires a small number of ingredients and near-to-no prep time. So whether you’re planning on catering for your family or friends, or looking for a relatively healthy breakfast, this recipe is perfect.

Prep time – 5 minutes | Cooking time – 10 minutes

Ingredients

  • 2 ripe ready to eat avocados
  • 2 eggs
  • 6 bacon slices (or 6 prosciutto slices)
  • Olive oil
  • A pinch of salt and black pepper
  • Parsley to garnish

Instructions

  • Place eggs in boiling water and soft boil them (approximately 3 minutes)
  • Remove the eggs and place into cold water
  • Carefully peel the egg shell off of the egg (without piercing it)
  • Cut the avocado in half and remove its outer skin
  • Scoop out the middle of the avocado so it is the same size as the egg
  • Carefully place the egg inside the avocado and join the avocado back together
  • Repeat this for the other egg
  • Wrap the sealed avocado tightly in bacon slices – place 2 strips horizontally and 1 vertically
  • Pour 1 tbsp of olive oil into a pan and place the wrapped avocado eggs inside
  • Turn frequently until the bacon is crispy all over (roughly 10 minutes)
  • Remove from the pan and leave the excess oil to drain before serving
  • Slice the avocado in half and serve
  • Optional – sprinkle with salt, pepper and parsley
